Description
Alder is well suited as a smoking wood, as it gives a relatively mild flavour and a dark golden colour to smoked foods.
Used by the smokehouses on Bornholm, among others, for smoked Bornholm herring.
All our smoking dust products can be used for both cold and hot smoking. The principle behind using dust and chips is that the dust produces the smoke, while the chips are mainly used to provide heat. By combining the two according to your own preference, you can achieve exactly the combination you feel is best for the particular product you want to smoke.
100% pure common alder from a German producer
Do you have high standards for your smoking dust? Dansk Hjemmeproduktion does. That's why we have now partnered with Dansk Træmel, a well-respected company and Denmark's largest supplier of smoking dust for home smoking and other wood flour products.
When it comes to making smoked delicacies, ever-higher demands are placed on the food itself, yet similar demands have not previously been made of the smoking dust and chips used in the smoking process. The smoky flavour of the finished product is crucial to the taste experience, just as the golden colour is crucial to its visual appeal.
It is well known that felled wood left lying develops germs, yeasts and moulds – a process that begins just a few days after the tree is felled. Smoking dust made from old wood will contain large quantities of these microorganisms, and the aroma of fresh beech will have turned into a dull, musty smell.
A lot of smoking dust is made from waste wood from the furniture industry. Not only does this wood have very little aroma, there is also a latent risk that wood treated with glue and other chemicals ends up in the milling process.
In partnership with Europe's largest sawmill, Dansk Træmel has developed a smoking dust concept that ensures an exceptional raw material in which the aroma is preserved, the microorganisms mentioned above can only be detected at very low levels, far below the limit values, and chemicals are 100% certain not to be present.
The felled wood lies in the forest for only a few days before it is collected and taken to the sawmill, where it is debarked and cut up.
The sawdust from the cutting goes straight to heat treatment, which stops the growth of bacteria and preserves the wood's light colour. The sawdust is then transported to their factory in Esbjerg, where the raw material is milled, dedusted, sorted and bagged.
Dansk Træmel would have liked to offer an organic product, but unfortunately this is not possible, as there are no rules for organic wood. However, they believe that you won't get any closer to an organic product than what Dansk Træmel offers.
The products are continually analysed by the food safety authorities, ensuring consistency and high quality.
