Vitamin C powder (ascorbic acid) is a naturally occurring vitamin
The vitamin is found in most fruits, e.g. lemons, oranges and blackcurrants.
Ascorbic acid has the following functions:
- Antioxidant, i.e. it prevents the effects of oxygen in the air.
- Acidity regulator.
- Colour stabiliser in foods.
The picture on the right shows 2 glasses of freshly pressed apple juice 10 hours after pressing. Ascorbic acid was added at the recommended dosage to the juice in the left-hand glass immediately after pressing. The juice tasted no different, but it kept a fresh colour. The juice in the right-hand glass has no ascorbic acid. Fresh juice with ascorbic acid added straight after pressing will keep its fresh colour and won't turn brownish after freezing in, for example, bag-in-box bags – see item numbers 3045, 6066 and 3067.
Dosage: 0.5 g/10 litres of apple juice or wine
Weight: 1 kg
Ascorbic acid, vitamin C, E300, as L-ascorbic acid in powder form.
Ascorbic acid is an organic acid with the formula C6H8O6. Most mammals can produce ascorbic acid themselves, but humans, apes and certain birds, fish and other animals cannot, so they can only obtain it through their diet. There are two forms of ascorbic acid: L-ascorbic acid and D-ascorbic acid. In its molecular structure, D-ascorbic acid is a mirror image of L-ascorbic acid, but D-ascorbic acid has no biological significance and is therefore not used as an antioxidant. This ascorbic acid is therefore pure L-ascorbic acid.
L-ascorbic acid is the same as vitamin C. It plays a role in the production of collagen in connective tissue, and the deficiency disease scurvy is characterised by changes in the skin and bones, swollen gums, loose teeth, bleeding and poor wound healing. L-ascorbic acid is also important for the production of neurotransmitters in the nervous system, the utilisation of folic acid, metabolism in the liver and the absorption of iron from the intestine.
