Description
All our smoke crumb / smoke crumb products can be used for both cold and hot smoking. The principles behind the use of wood chips and wood chips are that wood chips produce smoke and wood chips are primarily used to provide heat. By combining the two categories according to your own preference, you can achieve exactly the combination you personally feel is optimal for the product you want to smoke.
100% pure beech from a German manufacturer
Do you make demands for your smoke crumb? This is what Dansk Hjemmeproduktion does. Therefore, a collaboration has now been entered into with Dansk Træmel, a recognized company and Denmark's largest player in the supply of smoke dust for home smoking and other wood flour products.
In connection with the production of smoked delicacies, ever greater demands are placed on the food, without previously corresponding demands being placed on the smoke crumbs/chips used in the smoking process. The smoky taste in the finished product is decisive for the taste experience, just as the golden color is decisive for the visual experience.
It is a known fact that felled wood develops germs, yeasts and moulds, a process that starts a few days after the wood is felled. Smoke dust made from old wood will contain large amounts of the above, just as the aroma from fresh beech wood has turned into a dull, dusty smell.
Much smoke dust is made from waste wood from the furniture industry, in addition to this wood having a very poor aroma, there is also a latent risk of wood treated with glue and other chemicals entering the grinding process.
Dansk Træmel, in collaboration with Europe's largest sawmill, has developed a flue dust concept that ensures a unique raw material where the aroma is preserved and where the above-mentioned bacteria can only be detected to a very low degree and far below the limit values, and where chemicals with 100% safety notoccurs.
The felled wood only lies in the forest for a few days before it is taken to the sawmill, where it is debarked and cut up.
The sawdust from the cutting goes directly to heat treatment, after which the development of bacteria is stopped and the light color of the wood is maintained. The sawdust is then transported to their factory in Esbjerg, where the raw material is ground, dusted, sorted and bagged.
Dansk Træmel would like to offer one organic product, this is unfortunately not possible, as there is no set of rules for organic wood. However, it is their opinion that you don't get any closer to an organic product than what Dansk Træmel offers.
The products are continuously analyzed by the food inspection, which ensures uniformity and high quality.
