Description
Enzyme for reducing lactose in milk
This lactase enzyme is used to break down milk sugar (lactose) in milk and dairy products. When used correctly, the lactose content can typically be reduced by over 90 %, and in certain processes by up to approx. 98 %.
The product makes it possible to produce low-lactose or almost lactose-free dairy products in home production and smaller-scale production.
Well suited to lactose-free dairy products
Lactase can be used in all types of animal milk, including cow's, goat's and sheep's milk. The enzyme can be used when making, among other things, milk, cream, yoghurt, cheese, butter and ice cream.
Because lactose is broken down into glucose and galactose, which are perceived as sweeter than lactose, in many recipes it may be possible to reduce the amount of added sugar.
Use in cheese making and fermentation
During cheese making, some of the lactose is broken down naturally during acidification and maturing. By using lactase enzyme, the lactose content can be reduced further, which is relevant when making low-lactose cheeses and other fermented dairy products.
The product can be used either by pre-treating the milk or added during the process, depending on the desired method.
Important information about temperature
The lactase enzyme is heat-sensitive and is inactivated at temperatures above 50 °C. It is therefore important to ensure the correct temperature during use in order to achieve the desired enzyme activity.
Active enzyme with high enzyme strength
The active enzyme in the product is derived from Kluyveromyces lactis and has a high enzyme activity, which ensures effective and reliable breakdown of lactose at the correct dosage and temperature.
