Nordic herb sausage, sausage mix for making 10.95 kg of sausages, 850 grams

Sausage without flour and milk.

Complete mixture to which meat, fat, water and nitrite salt must be added to obtain a tasty 'Nordic Spiced Sausage' with good consistency and taste of tomato, onion, parsley, rosemary, lovage, garlic and pepper. Can be used for both smoked and unsmoked sausages.

Standard recipe is sent with the product. It is recommended that you follow the recipe the first time you make homemade grilled sausages. When you get more experience with making sausages, you can experiment with using less fat, adding more of your favorite spices, cheese or replacing, for example, lard with potatoes and the like. The recipes are primarily based on beef and pork, but also meat from sheep, lamb and different kinds of game can be used for sausages. The only limit is your imagination. However, be aware that the lower the fat content, the drier the sausages will be.

The spice mixes are manufactured by Moguntia A/S, a reputable supplier of products to many of Denmark's delicatessen and butcher shops. They are tried and tested solutions that give sausages that are tasty and have a good consistency.

Storage: Cool and dry at max. 25 C. After opening the bag, it is recommended that any excess spice mixture be stored in a refrigerator until the next sausage production.

NOTE: Remember to blanch fresh herbs, garlic and the like before adding them, as they can otherwise cause unwanted bacterial growth.

Dosage: 80 grams/kg sausage mass. This means that approximately 10.95 kg of sausages can be produced from this packaging.

23 grams of Nitrite salt (item numbers 6627a and b) are used in this recipe. The use of nitrite salt is optional. Regular table salt can also be used, but the color retention is slightly lower.
