Description
High quality natural pectin - approved for organic production
This pectin product has been developed for those who want a pure and effective gelling agent without preservatives. The pectin is produced from citrus fruits and gives jams, jams and fruit jellies a clear color and fine, even texture.
Easy to work with and economical to use
The pectin is very concentrated and therefore slow in use - a small amount goes a long way. It is also easier to work with than many similar products and gives a consistent and stable result every time.
Suitable for pickling and making fruit jelly
Use pectin as a natural starch for jams, marmalades, fruit jellies and fruit preserves - especially for recipes with a high sugar content.
Pectin is particularly useful in fruits with low natural pectin content such as strawberries, raspberries, blueberries and rhubarb, where it helps achieve the desired firmness and consistency.
Hint:
For best results, it is recommended to combine pectin with a little citric acid to adjust the pH and enhance the flavor. The optimal effect is achieved at a pH value of 3.0–3.1.
To ensure correct measurement, the use of a pH meter is recommended rather than test strips, as the color of the berries can affect the reading and give imprecise results.
Pectin and citric acid can be advantageously weighed on a precise kitchen scale or microscale for accurate dosing.
Dosage instructions
- 1000 g fruit/berry
- 1200–1800 g of sugar
- 4–9 g pectin per kg fruit/berry (1 tablespoon = approx. 6 g)
- 4–6 g of citric acid per kg of fruit is recommended
Here's how
- Mix pectin with approx. 90% of the sugar and stir it into the boiling fruit pulp.
- Let it boil for a few minutes and test the consistency by cooling a small sample in the fridge.
- If necessary, adjust with a little extra pectin mixed with sugar until the desired stiffness is achieved.
